Food | Peanut butter and white chocolate blondies

I first tried the peanut butter and white chocolate blondies at Leonard's cafe (Durham) in 2015!

I used the recipe from Rachel Allen and it was super easy and yummy. I have added extra chocolate to the recipe. Plus you need extra for the topping. 

Ingredients - 
125 g plain flour
1 tsp baking powder
100 g butter, at room temperature, plus extra for greasing
150 g crunchy peanut butter - I used smooth but next time I will use crunchy as I think it needed it
175 g light brown sugar or caster sugar if you don't have this in
1 egg
1 tsp vanilla extract
150 g white chocolate, large chunks - (if you want to decorate the top with melted choc you will need another 100g and I melted in microwave) 

Method -
Preheat the oven to 170c Butter the sides of a 20 x 20cm square cake tin and line the base with greaseproof paper. 

Mix the butter and peanut butter together first then, add the sugar, egg and vanilla extract and beat well. Then add the flour, baking powder and mix altogether - i use a stand mixer but by hand would be fine too.
Then once you have your mixture use a spoon to mix in the chopped chocolate.

Place the dough into the prepared tin and bake in the oven for 25 -30 minutes, or until golden brown and almost firm in the centre. I find this a hard bit as it was getting golden brown but it didn't feel cooked but I just left it to cool in the tin and it turned out fine.

Remove from the oven and allow to cool in the tin, before removing and cutting into squares.

Bake | Courgette savoury muffins

Over the last few months I have been getting back into baking mostly to give away to friends or to contribute to party food. This is becoming a favourite for everyone I know and they even like to freeze them (Top Tip*!)

I got this recipe from my friend Robyn as it was a favourite and always ran out way too quickly at the work charity buffet! I have also put the ingredients into My Fitness Pal to work out how many calories in each muffin, just to see how naughty they are and they are not too bad at 210 calories each!




Lets Bake!

What will you need? - Makes 12 muffins (approx 210 calories per muffin)
( TT* I usually double up my ingredients as you might as well make 24 as 12 doesn't last long at a party! Plus you can freeze them for having with soup or lunch another time)

100ml Olive Oil
200g Courgettes (Top and tailed then grated)
225g Self Raising Flour
1/4 tsp Salt
1 tsp English Mustard
1/4 tsp Chilli Powder
1/4 tsp Paprika
125g Mature Cheddar Cheese (grated)
3 eggs
4 tbsp Milk
Grated Red Leicester cheese to sprinkle over the top (or use some mature cheddar cheese)


  1. Fan assisted oven 180c 
  2. Put all ingredients (minus cheese for topping) into a mixer
  3. Make sure all is mixed together well
  4. Line your muffin tin with cases 
  5. Fill the muffins at least 3/4 full as they don't rise much
  6. Top with cheese
  7. Pop in a pre heated oven for at least 13 minutes or until golden brown
  8. Remove from oven and place on a cooling rack
  9. Serve cold or slightly warmed - nice with or without butter



Grated Courgettes

Pop all the ingredients into a mixing bowl

Measure out your Olive Oil

Mix Mix Mix

Muffin tin & cases at the ready

Check on them so they don't burn.. still some time to go!
What do they taste like?
They are a light moist cheese scone with a mild spicy kick, if you can imagine that.

Fashion | Verity - new Whistles Backpack

Meet Verity, my new backpack from Whistles.

I deliberated over this purchase for a few weeks after spotting it in the Whistles store in Leeds.  I haven't had a backpack since I was at school so I wasn't sure how much I would use it, plus are they cool?


After looking for a less expensive alternative, I gave up and bought Verity. 

Made of beautiful soft grey leather with a large loop handle (so can still use as a regular handbag) plus 2 adjustable straps. 

Super useful small zip pocket on the front hidden by a fold of leather with a magnet closing.

The main zip also folds over and fastens with another magnet. Inside is one zip up pocket to keep valuables. The lining is a lovely beige cotton which means you can see whats inside and its not a black hole. It helps all my accessories are pink! Total Winner!

I think it is going to need some getting used to as it is more effort to get your bag off your back to get your purse out but maybe I will buy less? haha



Inspired by the Cara Delevgine collection for Mulberry it looks like backpacks are here to stay. Blogger Tanya Burr was recently provided with a free Mulberry for a photoshoot and she has been sporting it everywhere she goes since and its worth £1600! Eeek! 100% jealous but even I can't justify that for a Mulberry.

Cocktails | Angelica's & Crafthouse, Leeds


On Saturday it was my quarterly catch up with my previous work colleagues who I have got back in touch with in the last 12 months. We used to work together 10 years ago and get on so well and talk about just how much as we enjoyed working together, I don't know how I lost touch with these treasures.

We all love the finer things in life including lovely bars and nice food.... Mrs P booked our locations and it was just perfect!

We started at a bar which is situated within the Trinity shopping centre..I still think of Trinity as pretty new (2 years old) and I have to be honest I had to get Miss AT to come and meet me as I had no idea where to go. I couldn't believe I didn't know about this hidden gem. I think the views from the top of Harvey Nichols is really good of Leeds but this was even better. 


It was chilly but a lovely day on Saturday so it was a great view from all sides of the bar whether you were outside or inside. We decided to sit by the bar inside as it was nice to be in the middle of the buzzing atmosphere as it was pretty busy in there at 3pm and there were no tables free but we didn't mind.

We had a few drinks while we caught up on all our news since we met up last before we headed downstairs to Crafthouse for a meal, there was a spiral staircase within the bar which took us straight into the restaurant.

We were sat on the left hand side of the restaurant next to window which was really nice, we ended up choosing from the 3 course set menu which was £22 per person. The service was impeccable and unexpected, I do expect good service but this exceeded my expectations.

We made friends with the bar man and this resulted in ordering lots of cocktails and I even managed to go off menu for my favourite Espresso Martini :-)

I originally ordered a chicken dish and it did taste nice but Mrs H and I decided to swap which turned out for the best, I really enjoyed the vegetarian pie.

with another Espresso Martini 

I will definitely be returning to both Angelica's and Crafthouse its nice to find somewhere new to go.

If you are in Leeds for the weekend I would recommend trying them out. If you didn't fancy a formal meal Miss AT had been to Angelica's for lunch before and said it was also yummy which is good to know.

What did I wear? Just to pre warn.. I am on a clothing ban again in April. I need to wear what I have before I can buy anymore, however this does mean most of my clothes are old season.... It will be worth it.

Kitchen | Breakfast Smoothie Recipe

Taking inspiration from Pinterest and my new fave blogger Madeline Shaw, it's time to start making some changes in order to glow from the inside out...

I have taken inspiration from a few recipes to make a fruit smoothie which is ideal for a Saturday morning breakfast when you have a bit more time. I saw on one of Zoella's vlog's the other week she added some porridge oats so I have been trying this out recently.




Good thing about smoothies is that you can pretty much make up your own recipe. I haven't tried the green versions yet so I will keep you posted.

What you need? (1 portion approx 250 calories)
1 small or 1/2 medium banana
10 raspberries
4 strawberries
10 blueberries
2 tablespoons of 0% fat greek yogurt
2 tablespoons of semi skimmed milk
2 tablespoons of porridge oats
3 ice cubes

Day trip | Bamburgh Castle & Beach Walk


Last week I headed 1 hour north to visit Bamburgh Beach which sits in a backdrop of the beautiful Bamburgh Castle. With free parking on the streets or in a large car park at the bottom of the village its a cheap day out. 

There is a selection of cafe's, pubs and small shops within the village so it has a bit of something for everyone.



By cutting through the village green at the foot of the castle you reach sand dunes by small footpaths which lead you down onto the beach. 


It was pretty busy on the beach but as it is so large you can sit and take in the view without being near anyone else.

I am trying to walk more using my Fitbit armband as my motivation, I didn't realise how little steps I sometimes do during the working week. I am walking my step goals on weekends no problem but when I am sat at my desk and if I don't get time to take a short walk on lunch I do end up doing 50% less than I should be. 

Now the weather is improving I have decided to start taking walks around the block. When I think I have done enough I check the app on my phone and if I haven't hit my goal of 8 - 10k steps I have to keep walking.

Anyways I have got off track. Bamburgh beach does go for miles and in all I walked for nearly 3 hours up and down the beach until it got a bit cold and windy.

I love to write in the sand



It is sometimes hard to know what to wear and if I am local I wear trainers and gym gear but if I am heading further afield I feel like I should be more dressy so I went with jeans, ankle boots and Barbour jacket. 

After a long walk I had a 99 flake ice cream before heading back home - Yum!

Kitchen | Homemade Salsa

Easy Saturday night mexican nibble food (pico de gallo) recipe for you today with no cooking required just lots of chopping.


What you need - (serves 2)
4 salad tomatoes 
1/2 bunch of coriander
1/2 white onion
1 large or 2 small green chilli
1 Fresh Lime - juice only


1) To make slice and quarter the tomatoes, discard the soft inside then chop rest of tomato into chunks

2) Finely chop 1/2 a white onion 


3) Do the same with the green chilli's once you have removed the seeds and tops


3) Then finally chop the coriander then add all ingredients to a serving bowl


4)  1/2 the lime then squeeze the fresh lime juice all over then stir all the ingredients then it is ready to serve.


I served mine with homemade tortilla chips which are surprisingly easy to do -  

Take some soft tortilla wraps, slice into triangles and place onto a baking sheet.

You can brush with oil if you wish and sprinkle salt for taste but after a couple of batches we decided it tasted better without anything extra.

Bake for max 5 mins in a warm oven but keep checking them as I did fail the first time and I burnt mine :-(





This is totally a winning combo and I won't be buying salsa again, its so nice to have homemade.
